Today was a long day. I am not sure why, because I didn’t really do anything out of the ordinary. Did some errands and cleaning. The usual barn work. I think the 15+ inches of snow on the ground may have something to do with it! It is extremely hard to walk outside right now in that much snow - let alone water horses in pastures, walk horses in that deep of snow and move wheelbarrows full of you know what !
So for dinner I made a favorite quick recipe. It is not super wholesome but it is yummy and the girls love it. It is always better the second day - if there is any left!
Macaroni Casserole
1 lb. ground beef
1 small onion, diced
1 family size box of macaroni and cheese
1 can of cream of mushroom soup
a little milk
Brown the ground beef with the onion. Make the macaroni and cheese, just like you were going to eat it - follow instructions on the box. Mix together with beef. Stir in the mushroom soup, a little milk to make it creamy. Season with some salt and pepper and bake at 325F for 20 minutes.
